Preparation time: 15 minutes
Cooking time: 20 minutes
Serves: 6

Ingredients:
1 onion, diced
2 cloves garlic, finely chopped
8 pieces of under ground mutton (UGM)
1/2 teaspoon chilli powder
500 g tomato-based bottled pasta sauce
1 X 440 g can kidney beans
1/2 cup water
250 g fresh or frozen mixed vegetables
1 teaspoon olive oil
1/2 bunch parsley or coriander

Cooking Method:
1. Heat oil in a large saucepan. Add onion and garlic, cook over a medium heat until onion is soft.
2. Add the UGM, cook until lightly browned.
3. Add chilli powder, pasta sauce, kidney beans, vegetables and water. Simmer over a low heat for 20 minutes, stirring occasionally.
4. Add chopped coriander/parsley and serve.

Notes: Serve with plain rice, reduced fat natural yoghurt and a green salad.

That's the way to serve up UGM Chilli con carne.
