Took this little lady last weekend and have been looking forward to cooking it up all week. Woke up this morning and it's sleeting, blowing a gale, cold and generally miserable.
Just the weather for a BBQ!
Goat was rubbed with a mixture of olive oil and lots of finely chopped garlic, fresh rosemary, fresh thyme and lemon rind (just the yellow outer skin) and a bit of salt and pepper.
Covered the extremities in foil and onto the spit (you can see the lovely weather in the wet deck, the bushes in the background bent over by the wind and my sunny spring day dress sense)
bbq right down low, basted every 15 odd minutes with the leftover rub, sprinkled some masterfoods piri-piri seasoning flakes on for a bit of a chili bite half way through and cooked for a little under an hour. Also wrapped some whole beetroots, onion and potato's in foil and chucked them in the back.
Made a sauce out of greek yoghurt, lemon juice and finely diced lemon rind, garlic, rosemary, thyme, salt and pepper and stuffed my face.
Very nice indeed!
